Caribbean Christmas Flavors - Coledown Kitchen
Jamaican Jerk Roast Turkey
This succulent roast turkey is marinated in a blend of fiery Jamaican jerk spices, giving it a zesty and aromatic twist for your Christmas feast.
Ingredients:
- 12-15 lb whole turkey
- 1/4 cup olive oil
- 3 tbsp Jamaican jerk seasoning
- 2 tbsp brown sugar
- 2 tsp thyme leaves
- 4 cloves garlic, minced
- 2 tsp ground allspice
- 1 tsp ground cinnamon
- Salt and pepper to taste
Instructions:
1. In a bowl, mix olive oil, jerk seasoning, brown sugar, thyme, garlic, allspice, cinnamon, salt, and pepper to create the marinade.
2. Rub the marinade all over the turkey, including under the skin and inside the cavity. Cover and refrigerate overnight.
3. Preheat the oven to 325°F (165°C). Place the marinated turkey on a roasting rack in a roasting pan.
4. Roast the turkey, basting every 30 minutes, until the internal temperature reaches 165°F (75°C) in the thickest part of the thigh.
5. Allow the turkey to rest for 20-30 minutes before carving. Serve with traditional Caribbean sides.

Caribbean Christmas Ham
Elevate your Christmas centerpiece with a succulent and flavorful Caribbean Christmas ham, glazed with a mixture of tropical ingredients that capture the essence of the islands.
Ingredients:
- 1 bone-in ham (8-10 pounds)
- 1 cup pineapple juice
- 1/2 cup orange juice
- 1/4 cup brown sugar
- 1/4 cup honey
- 2 tbsp Dijon mustard
- 2 cloves garlic, minced
- 1 tsp ground ginger
- 1/2 tsp ground cinnamon
- 1/4 tsp ground allspice
- Whole cloves for garnish
Instructions:
1. Preheat the oven to 325°F (165°C).
2. Place the ham in a roasting pan and score the surface with shallow cuts in a diamond pattern.
3. In a bowl, whisk together the pineapple juice, orange juice, brown sugar, honey, Dijon mustard, minced garlic, ground ginger, ground cinnamon, and ground allspice to create the glaze.
4. Brush a generous amount of the glaze over the ham, making sure to get it into the scored cuts.
5. Insert whole cloves into the scored cuts for added flavor and decoration.
6. Cover the ham loosely with aluminum foil and bake in the preheated oven, allowing about 15-20 minutes of cooking time per pound of ham. Baste the ham with the glaze every 30
