    Irish Soda Bread Bruschetta

    Take a classic Italian favorite and give it an Irish twist! Our Irish Soda Bread Bruschetta combines the rustic charm of traditional soda bread with the freshness of tomatoes, basil, and mozzarella. It's a taste of the Mediterranean with a touch of the Emerald Isle.

    Irish Soda Bread

    Ingredients:

    - 3 cups all-purpose flour

    - 1 teaspoon baking soda

    - 1 teaspoon salt

    - 1 ½ cups buttermilk

    Instructions:

    1. Preheat your oven to 425°F (220°C). Lightly grease a baking sheet or line it with parchment paper.

    2. In a large mixing bowl, sift together the flour, baking soda, and salt.

    3. Make a well in the center of the dry ingredients and pour in most of the buttermilk.

    4. Using your hands or a wooden spoon, mix the ingredients until you have a soft dough. Add more buttermilk if the dough seems too dry.

    5. Turn the dough out onto a lightly floured surface and gently knead it for a minute, just until it comes together.

    6. Shape the dough into a round loaf and place it onto the prepared baking sheet.

    7. Use a sharp knife to score a deep cross into the top of the loaf.

    8. Bake in the preheated oven for 15 minutes, then reduce the oven temperature to 400°F (200°C) and continue baking for an additional 25-30 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.

    9. Remove the bread from the oven and transfer it to a wire rack to cool completely before slicing.

    - 1 loaf Irish soda bread (recipe above), sliced

    - 2 large tomatoes, diced

    - 1/2 cup fresh basil, chopped

    - 1 cup fresh mozzarella,
