GLAZED CHRISTMAS GAMMON
This little piggie…
A glazed gammon off the braai will always be hit on any festive table. This one is wonderful – served hot or at room temperature.
Ingredients (serves 8-10)
1 deboned smoked gammon, 2 kg
1 large carrot, coarsely chopped
1 onion, coarsely chopped
2 bay leaves
1 l ginger beer
1 tablespoon cake flour
½ cup cherry jam
¼ cup honey
1tablespoon mustard
Here’s how
the gammon, carrot, onion, bay leaves and cake flour in alarge roasting bag and place in an ovenproof dish. Carefully add the ginger beer, close the bag and poke a few small holes in the top of the bag. Bake for about 2hours in an oven at 180 ºC (or 30 minutes for every 500 g).
