Partridge, chard and cheese pasties

Much like a canapé party, tailgate picnics lend themselves to big-flavour food that can be eaten with one hand while you hold a drink in the other. That said, I like to have something a little more substantial than a one-bite morsel, so this partridge pasty is perfect.

Makes 8 pasties

▸ Filling

1 medium yellow onion, peeled and finely diced1 tbsp rapeseed or olive oil1 tbsp butter4 partridge breasts, boneless, skin off8 large basil leaves, finely sliced1 tbsp100ml double cream100g fresh chard, blanched, squeezed and finely chopped40g strong cheddar cheese, grated1 tbsp wholegrain mustard
