"We all have to start somewhere" I am thrilled to welcome Kim Campbell, acclaimed author of three cookbooks: PlantPure Comfort Food Cookbook, PlantPure Nation Cookbook, and the PlantPure Kitchen Cookbook. She is the Director of Culinary Education at PlantPure Nation, where she has developed hundreds of delicious whole food plant-based recipes using no processed oils. She also has led development of one of the largest plant-based frozen entrée lines on the market. Kim is the daughter-in-law of Dr. T. Colin Campbell, considered by many as at the science ‘father’ of the rapidly growing plant-based nutrition movement. Fueled by her passion for the plant-based nutrition message, Kim has created recipes, food lines, and cookbooks that have helped change the way people view the food they put in their bodies.Kim joins me today to discuss her brand new cookbook, PlantPure Comfort Foods as well as another passion project, PlantPure immersions.
