    Carrot and Ginger Soup

    INGREDIENTS

    - 1 medium carrot, peeled and chopped

    - 1 small onion, chopped

    - 1 garlic clove, minced

    - 1 teaspoon fresh ginger, grated

    - 1 cup vegetable broth

    - 1/4 cup coconut milk

    - Salt and pepper to taste

    COOKING TOOLS

    - Vegetable peeler for peeling the carrot

    - Chopping board

    - Knife for chopping the carrot, onion, and garlic

    - Grater for grating the fresh ginger

    - Medium-sized pot for cooking the soup

    - Wooden spoon for stirring the ingredients

    - Measuring spoons for measuring the vegetable broth and coconut milk

    - Salt and pepper shaker for seasoning the soup

    - Ladle for serving the soup

    - Bowl or soup mug for serving the soup

    STEPS

    1. Peel and chop the medium carrot.

    2. Chop the small onion and mince the garlic clove.

    3. Grate the fresh ginger using a grater.

    4. In a medium-sized pot, heat some oil over medium heat.

    5. Add the chopped onion and minced garlic to the pot.

    6. Sauté the onion and garlic until they become translucent.

    7. Add the chopped carrot and grated ginger to the pot.

    8. Stir the ingredients together and cook for a few minutes.

    9. Pour in the vegetable broth and bring the mixture to a boil.

    10. Reduce the heat and let the soup simmer for about 15-20 minutes or until the carrot is tender.

    11. Using a ladle, carefully transfer the soup to a blender or use an immersion blender directly in the pot to blend the ingredients until smooth.

    12. Return the blended soup to the pot and stir in the coconut milk.

    13. Season with salt and pepper to taste.

    14. Cook the soup for an additional 5 minutes to heat through.

    15. Once heated, serve the carrot and ginger soup in a bowl or soup mug using a ladle.

    ENJOY

    Carrot and Ginger Soup - serve for 1 with a suitable drink: Pair it with a refreshing glass of citrus-infused sparkling water.

    Carrot 2:

    Honey Glazed Carrots

    INGREDIENTS

    - 1 medium-sized carrot

    - 1 tablespoon honey

    - 1 teaspoon butter

    - Salt and pepper to taste

    COOKING TOOLS

    - Medium-sized saucepan

    - Cutting board

    - Knife

    - Vegetable peeler

    - Measuring spoons

    STEPS

    1. Peel the carrot using a vegetable peeler.

    2. Place the medium-sized saucepan on the stove and set it to medium heat.

    3. Cut the peeled carrot into thin slices using a knife.

    4. Add the butter to the saucepan and let it melt.

    5. Add the sliced carrot to the saucepan and sauté for about 2 minutes, stirring occasionally.

    6. Add the honey to the saucepan and continue sautéing for another 2 minutes, until the carrot slices are coated with the honey glaze.

    7. Season with salt and pepper to taste.

    8. Reduce the heat to low and cover the saucepan with a lid.

    9. Let the honey glazed carrots simmer for about 5 minutes, or until the carrot slices are cooked to your desired tenderness.

    10. Remove from heat and transfer the honey glazed carrots to a serving dish. Serve hot.

    Carrot 3:

    Roasted Carrot Salad with Feta and Pistachios

    INGREDIENTS

    - 1 large carrot

    - Feta cheese

    - Pistachios

    COOKING TOOLS

    - Vegetable peeler (optional)

    - Baking sheet

    - Aluminum foil (optional)

    - Mixing bowl

    - Salad tongs or large spoon

    - Salad plate or bowl (for serving)

    STEPS

    1. Preheat your oven to 400°F (200°C).

    2. Wash the carrot well and peel it if desired. Pat dry with a clean towel.

    3. Using a sharp knife, cut the carrot into thin, even slices or sticks.

    4. Place the carrot slices on a baking sheet lined with aluminum foil or directly on the baking sheet.

    5. Drizzle some olive oil over the carrot slices, ensuring they are evenly coated.

    6. Season the carrots with salt and pepper to taste.
