CHILLI CON CARNE
Fast for a Friday night
This dish is ready within 20 minutes of the coals being ready – and the perfect choice for the night you arrive at the campsite.
Ingredients
(serves 4, with leftovers)
2 tablespoons oil
500 g mince meat
1 onion, finely chopped
1 packet (50 g) chilli con carne spices (we used one from Woolworths)
500 g tomato passata
2 cans (400 g each) red kidney beans, drained
250 g nachos or tortilla corn chips
1 cup grated cheese
2 ripe avocados, diced
1 cucumber, diced sour cream or Greek yoghurt
