STUFFED LAMB CHOPS Chop chop!
Ask your butcher to cut the chops double the normal thickness with two bones each for this treat.
Ingredients
(enough for 6)
2 wheels feta, crumbed
12 olives, pitted and chopped grated zest and juice of 1 large lemon
2 tablespoons chopped fresh parsley (or 1 teaspoon dry parsley)
6 double-cut lamb rib chops
2 tablespoons balsamic vinegar
1 tablespoon olive oil
1 teaspoon each coriander and cumin, crushed
salt to taste
Here’s how
1 Mix together the feta, olives, lemon zest and parsley.
2 Cut a slit in the fat side of each chop with a sharp knife and stuff a spoonful of the feta stuffing in the middle of the meat.
