CHICKEN AND CHEESE BRAAI BURGERS

Lighting a fire that first night of camping is always fantastic. But pick something quick to braai for dinner so everyone can eat and then relax after the drive and all the unpacking.

Ingredients

(makes 8 burgers)

8 chicken breast fillets
1 tablespoon olive oil
1 tablespoon braai spice (we used Six Gun Grill Seasoning)
8 slices cheddar cheese
100 g pancetta strips or black forest ham – you need enough to cover the cheese on each breast
8 roosterkoeke (we bought the ready-made ones from Checkers)
a handful rocket leaves
2 large ripe tomatoes, sliced

Here’s how

1 Butterfly each chicken fillet by making an incision in the middle with a sharp knife and then opening it up. It increases the surface area of the breast and covers more of the bread. Plus, it cooks faster.
