INGREDIENTS:
For the Pizza Dough:
● 1 package (2 1/4 teaspoons) active dry yeast
● 1 teaspoon sugar
● 1 cup warm water (110°F/43°C)
● 2 1/2 cups all-purpose flour
● 1 teaspoon salt
● 1 tablespoon olive oil
For the BBQ Chickpeas:
● 1 can (15 oz) chickpeas, drained and rinsed
● 1/2 cup barbecue sauce
● 1 tablespoon olive oil
● 1 teaspoon smoked paprika
● Salt and pepper to taste
For the Pizza Toppings:
● 1 cup vegan mozzarella cheese, shredded
● 1 red onion, thinly sliced
● 1/2 cup corn kernels
● Fresh cilantro, chopped (for garnish)
Instructions:
Preheat the oven to 475°F (245°C).
In a small bowl, combine the active dry yeast, sugar, and warm water. Let it sit for about 5 minutes, or until it becomes frothy.
In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Mix until a dough forms.
Knead the dough on a floured surface for about 5 minutes until it becomes smooth. Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.
While the dough is rising, prepare the BBQ chickpeas. In a bowl, toss the chickpeas with barbecue sauce, olive oil, smoked paprika, salt, and pepper.
Once the dough has risen, roll it out on a floured surface to your desired thickness. Transfer the dough to a pizza stone or a baking sheet.
