Caprese Quinoa Stuffed Bell Peppers
Ingredients:
● 4 large bell peppers, any color
● 1 cup quinoa, rinsed and cooked according to package instructions
● 1 cup cherry tomatoes, halved
● 1 cup fresh mozzarella balls, halved
● 1/4 cup fresh basil, chopped
● 2 tablespoons balsamic glaze
● 2 tablespoons extra virgin olive oil
● Salt and pepper, to taste
Instructions:
Preheat the oven to 375°F (190°C).
Cut the tops off the bell peppers and remove the seeds and membranes.
In a large mixing bowl, combine cooked quinoa, cherry tomatoes, mozzarella, and chopped basil. Drizzle with olive oil and balsamic glaze. Season with salt and pepper, then toss to combine.
Stuff each bell pepper with the quinoa mixture, pressing down gently to pack it.
Place the stuffed bell peppers in a baking dish and cover with aluminum foil.
Bake in the preheated oven for 25-30 minutes or until the peppers are tender.
Remove the foil and bake for an additional 5-10 minutes to allow the tops to brown slightly.
