    INGREDIENTS:

    ●  4 large bell peppers, any color

    ●  1 cup quinoa, rinsed and drained

    ●  2 cups vegetable broth or water

    ●  1 tablespoon olive oil

    ●  1 onion, finely chopped

    ●  2 cloves garlic, minced

    ●  1 zucchini, diced

    ●  1 cup cherry tomatoes, halved

    ●  1 teaspoon cumin

    ●  1 teaspoon paprika

    ●  Salt and pepper to taste

    ●  1 cup black beans, drained and rinsed

    ●  1 cup corn kernels (fresh or frozen)

    ●  1 cup shredded cheese (cheddar or your choice)

    ●  Fresh cilantro or parsley for garnish

    Instructions:

    Preheat the oven to 375°F (190°C).

    Cut the tops off the bell peppers and remove the seeds and membranes. If needed, trim the bottoms slightly to help them stand upright in the baking dish.

    In a medium saucepan, combine the quinoa and vegetable broth (or water). Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed.

    While the quinoa is cooking, heat olive oil in a large skillet over medium heat. Add chopped onions and garlic, sautéing until softened.

    Add diced zucchini and cook for another 3-4 minutes until it begins to soften.

    Stir in cherry tomatoes, cumin, paprika, salt, and pepper. Cook for an additional 2-3 minutes.

    Mix in the black beans, corn, and cooked quinoa. Stir until well combined.

    Stuff each bell pepper with the quinoa mixture, pressing down gently to pack the filling.

    Place the stuffed peppers in a baking dish. Top each pepper with shredded cheese.

    Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.

    Remove the foil and broil for an additional 2-3 minutes, or until the cheese is golden and bubbly.

    Garnish with fresh cilantro or parsley before serving.
