ROASTED SALMON WITH ARTICHOKE HEARTS AND LEMON-DILL YOGURT SAUCE

ROASTED ARTICHOKE HEARTS AND LEEKS

2 tbsps olive oil
2 tbsps lemon juice
3 garlic cloves, minced
½ tsp kosher salt
¼ tsp ground black pepper
Two 14-ounce cans quartered
artichoke hearts, rinsed and dried
2 leeks, sliced (or 2 large red onions, cut into wedges and separated)

ROASTED SALMON

4 salmon fillets, about 5 ounces each
