Mixed mushroom risotto
Mushrooms have compounds in them that act as a prebiotic which helps to stimulate the growth of gut microbiota.

2 sprigs fresh thyme
150g mixed mushrooms (any variety), roughly chopped
250g risotto rice (look out for wholegrain for a fibre boost) Juice of ½ lemon
600ml vegetable stock
200ml almond milk
60g Parmesan, finely grated, plus extra
