Lentil and Vegetable Stuffed Peppers
Ingredients:
● 4 large bell peppers, any color
● 1 cup dry green or brown lentils
● 2 1/2 cups vegetable broth or water
● 2 tablespoons olive oil
● 1 onion, finely chopped
● 2 cloves garlic, minced
● 1 carrot, diced
● 1 zucchini, diced
● 1 cup cherry tomatoes, halved
● 1 teaspoon dried oregano
● 1 teaspoon ground cumin
● Salt and pepper to taste
● 1 cup cooked quinoa or rice
● 1 cup shredded vegan cheese (optional)
● Fresh parsley or cilantro for garnish
Instructions:
Preheat the oven: Preheat your oven to 375°F (190°C).
Prepare the lentils: Rinse the lentils under cold water. In a medium saucepan, combine the lentils and vegetable broth or water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 20-25 minutes or until the lentils are tender but not mushy. Drain any excess liquid.
Prepare the peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish, cut side up.
Sauté the vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened. Add the minced garlic, diced carrot, and diced zucchini. Cook for an additional 5-7 minutes until the vegetables are tender.
Combine the filling: Add the cooked lentils, cherry tomatoes, dried oregano, ground cumin, salt, and pepper to the skillet. Stir well and cook for another 2-3 minutes. Remove from heat and stir in the cooked quinoa or rice.
Stuff the peppers: Spoon the lentil and vegetable mixture into the prepared bell peppers, pressing down gently to pack the filling. If desired, sprinkle vegan cheese on top.
Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes or until the peppers are tender.
Garnish and serve: Remove from the oven and garnish with fresh parsley or cilantro. Serve the stuffed peppers hot, and enjoy your delicious and nutritious Lentil and Vegetable Stuffed Peppers!
