1.Quinoa-Stuffed Bell Peppers
Here's a recipe for Quinoa-Stuffed Bell Peppers:
Ingredients:
● 4 large bell peppers (any color)
● 1 cup quinoa, rinsed
● 2 cups vegetable broth or water
● 1 tablespoon olive oil
● 1 onion, diced
● 2 cloves garlic, minced
● 1 can (15 ounces) black beans, drained and rinsed
● 1 can (14 ounces) diced tomatoes, drained
● 1 teaspoon ground cumin
● 1 teaspoon chili powder
● Salt and pepper to taste
● 1 cup shredded cheese (optional)
● Fresh cilantro or parsley for garnish (optional)
Instructions:
Preheat your oven to 375°F (190°C).
Cut the tops off the bell peppers and remove the seeds and membranes from the inside. Rinse the peppers and set them aside.
In a saucepan, bring the vegetable broth or water to a boil. Add the rinsed quinoa, reduce the heat to low, cover, and simmer for about 15-20 minutes or until the quinoa is cooked and the liquid is absorbed. Remove from heat and fluff with a fork.
In a skillet, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional minute.
Stir in the black beans, diced tomatoes, ground cumin, chili powder, salt, and pepper. Cook for another 2-3 minutes, allowing the flavors to blend.
Combine the cooked quinoa with the bean mixture in the skillet and mix well.
Place the hollowed-out bell peppers upright in a baking dish. Stuff each pepper with the quinoa mixture until they're filled to the top. If desired, top each pepper with shredded cheese.
Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.
Remove the foil and bake for an additional 5-10 minutes if you prefer a crispy top.
Once done, garnish with fresh cilantro or parsley if desired before serving. Enjoy your delicious quinoa-stuffed bell peppers!
