Using pork scratchings as a crumb is truly one of the tastiest grain-free ways to crumb food. I buy my pork scratchings from the gluten-free aisle or the crisps section of my local supermarkets. Take time to read the packet, ensuring that it’s gluten-free and quality-raised pork. I usually keep a few packets in my pantry for a last-minute crumb that can be thrown on any kind of meat or over vegetables to add crunch.

800 g hake fillets, skinned
50 g cassava flour
5ml (1 tsp) pink salt
