    Instructions:

    PREPARATION:

    ●  Preheat your oven to 400°F (200°C).

    ●  Wash and dry the cauliflower, then remove the florets.

    ●  Using a food processor, pulse the florets until they resemble fine grains, almost like rice.

    ●  Transfer the cauliflower rice to a microwave-safe bowl and heat it for 4-5 minutes. Allow it to cool.

    Crust Making:

    ●  Once cooled, place the cauliflower in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial for a crispy crust.

    ●  In a bowl, combine the cauliflower, beaten egg, Parmesan cheese, oregano, garlic powder, salt, and pepper. Mix thoroughly.

    Baking the Crust:

    ●  Line a baking sheet with parchment paper and form the cauliflower mixture into a round crust, about 1/4 inch thick. Make sure to press it firmly together.

    ●  With the food processor running, slowly pour in the olive oil until the mixture forms a smooth paste. Season with salt and pepper to taste.

    Combine the Noodles and Pesto:

    ●  In a large skillet, heat a bit of olive oil over medium heat. Add the zucchini noodles and sauté for about 2-3 minutes until they're just tender. Be careful not to overcook them; zucchini noodles soften quickly.

    ●  Once the noodles are heated through, add the prepared pesto to the skillet. Toss the noodles gently to coat them evenly with the pesto. Cook for an additional minute or so, allowing the flavors to meld.

    Serve:

    ●  Remove the skillet from the heat. Optionally, garnish with halved cherry tomatoes and a sprinkle of additional grated Parmesan cheese.
