Classic American Diner Fare - Pablo Picante
Chapter 1: Breakfast Classics
Fluffy Buttermilk Pancakes:
Ingredients:
● 1 1/2 cups all-purpose flour
● 2 tablespoons granulated sugar
● 1 teaspoon baking powder
● 1/2 teaspoon baking soda
● 1/2 teaspoon salt
● 1 1/4 cups buttermilk
● 1 large egg
● 2 tablespoons unsalted butter, melted
● Butter or oil for cooking
Instructions:
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In another bowl, whisk together the buttermilk, egg, and melted butter.
Pour the wet ingredients into the dry ingredients and stir until just combined. It's okay if there are a few lumps.
Heat a skillet or griddle over medium heat and lightly grease with butter or oil.
Pour about 1/4 cup of batter onto the skillet for each pancake.
Cook until bubbles form on the surface of the pancake and the edges look set, then flip and cook until golden brown on the other side.
Repeat with the remaining batter.
Serve hot with your favorite toppings like maple syrup, fresh fruit, or whipped cream.
Crispy Bacon and Eggs:
Ingredients:
● Bacon slices
● Eggs
● Salt and pepper to taste
Instructions:
Heat a skillet over medium-high heat.
Add bacon slices to the skillet in a single layer, making sure not to overcrowd the pan.
Cook the bacon until it's crispy and browned to your liking, flipping occasionally.
Remove the cooked bacon from the skillet and drain on paper towels.
Crack eggs into the same skillet and cook to your desired doneness, seasoning with salt and pepper.
Serve the crispy bacon and eggs hot, alongside toast or other breakfast favorites.
Homemade Breakfast Burritos:
Ingredients:
● Flour tortillas
● Eggs
● Breakfast sausage or bacon
● Shredded cheddar cheese
● Diced bell peppers
● Diced onions
● Salt and pepper to taste
Instructions:
Cook breakfast sausage or bacon in a skillet over medium heat until browned and cooked through. Remove from skillet and set aside.
In the same skillet, sauté diced bell peppers and onions until softened.
Crack eggs into the skillet and scramble until cooked to your desired consistency. Season with salt and pepper.
Warm flour tortillas in a separate skillet or in the microwave.

Ingredients:
● Thick slices of bread (like brioche or Texas toast)
● Cream cheese
● Fresh blueberries
● Eggs
● Milk
● Vanilla extract
● Cinnamon
● Maple syrup for serving
Instructions:
In a small bowl, mix together softened cream cheese and fresh blueberries.
Spread the cream cheese and blueberry mixture onto one slice of bread, then top with another slice to make a sandwich.
In a shallow dish, whisk together eggs, milk, vanilla extract, and cinnamon to make the French toast batter.
Dip each sandwich into the egg mixture, coating both sides evenly.
Cook the stuffed French toast on a buttered skillet or griddle over medium heat until golden brown and cooked through, flipping halfway through.

● Eggs
● Diced ham
● Diced bell peppers
● Diced onions
● Shredded cheddar cheese
● Salt and pepper to taste
● Butter or oil for cooking
Instructions:
In a bowl, whisk together eggs, salt, and pepper.
Heat a skillet over medium heat and add a little butter or oil.
Add diced ham, bell peppers, and onions to the skillet and sauté until softened.
Pour the whisked eggs over the vegetables and ham in the skillet.
Cook, gently lifting the edges of the omelette with a spatula and tilting the skillet to let the uncooked eggs flow underneath.
Once the eggs are mostly set, sprinkle shredded cheddar cheese over one half of the omelette.
Fold the other half of the omelette over the cheese and cook for another minute or until the cheese is melted and the omelette is cooked through.
