    Chapter 1: Appetizers and Starters

    Töltött Paprika (Stuffed Peppers)

    Description: Töltött Paprika, or Stuffed Peppers, is a classic Hungarian dish that combines bell peppers, flavorful ground meat, rice, and a rich tomato sauce.

    Ingredients:

    ●  6 large bell peppers (any color)

    ●  500g ground pork or beef (or a mixture)

    ●  1 cup rice, cooked

    ●  1 onion, finely chopped

    ●  2 cloves garlic, minced

    ●  2 tablespoons Hungarian paprika

    ●  1 can (400g) crushed tomatoes

    ●  1 cup beef or vegetable broth

    ●  Salt and pepper to taste

    ●  Olive oil for cooking

    Instructions:

    Preheat the oven to 180°C (350°F).

    Cut the tops off the bell peppers and remove the seeds and membranes. Rinse them and set aside.

    In a pan, heat olive oil over medium heat. Sauté the onions until translucent, then add garlic and cook for another minute.

    Add the ground meat to the pan and cook until browned. Season with salt, pepper, and Hungarian paprika.

    Stir in the cooked rice and combine well with the meat mixture.

    Stuff each bell pepper with the meat and rice mixture, filling them to the top.

    In a separate bowl, mix the crushed tomatoes and broth. Season with salt and pepper.

    Place the stuffed peppers in a baking dish and pour the tomato-broth mixture around them.

    Cover the dish with foil and bake for about 45-50 minutes, or until the peppers are tender.

    Serve hot, spooning some of the tomato sauce over each pepper.

    Túrós Csusza (Noodles with Cottage Cheese)

    Description: Túrós Csusza is a comforting Hungarian dish featuring egg noodles combined with creamy cottage cheese and crispy bacon.

    Ingredients:

    ●  400g egg noodles

    ●  300g cottage cheese (dry curd or farmer's cheese)

    ●  200g sour cream

    ●  200g bacon, diced

    ●  1 onion, finely chopped

    ●  Salt and pepper to taste

    ●  Butter for cooking

    Instructions:

    Cook the egg noodles according to package instructions. Drain and set aside.

    In a pan, fry the diced bacon until crispy. Remove the bacon from the pan, leaving the rendered fat.

    In the same pan, add a knob of butter and sauté the chopped onion until golden.

    Lower the heat and add the cooked noodles to the pan. Stir well to combine with the onions.

    Add the cottage cheese and sour cream to the noodles. Mix until the cheese is evenly distributed and slightly melted.

    Season with salt and pepper to taste.

    Serve the Túrós Csusza topped with crispy bacon.
