A CUT ABOVE THE REST
BEEF SATAY
MAKES: 10 (serving 3-4)
PREP + COOKING TIME: 20 minutes (plus marinating)
INGREDIENTS
500 g blade steak, cut against the grain and into 6 mm-thick strips
1 tbsp cornstarch
3 tbsps soy sauce
2 tbsps brown sugar
2 tbsps canola oil
10 wooden skewers soaked in water
For the satay sauce:
¼ cup tomato sauce
1 tbsp honey
1 tsp hot sauce
Salt and pepper to taste
METHOD
1. In a medium bowl, mix cornstarch with 1 tablespoon soy2. For the satay sauce: Whisk together tomato sauce, honey, hot sauce, ½ teaspoon of sea salt and freshly cracked black pepper to taste.3. Line baking sheet with foil. Remove beef strips from the marinade and pat dry with paper towels. Discard marinade.4. Thread a piece of meat onto each skewer and arrange on the prepared baking sheet.5. Preheat the broiler grill on high. Brush both sides of the meat with satay sauce and broil for 3-4 minutes or until browned. Turn skewers, then broil for another 2-4 minutes. Serve with lime wedges, garnished with parsley.
