    Brisket Omelet

    Ingredients

    3 large eggs

    1/4 cup cooked brisket, shredded

    1/4 cup shredded cheddar cheese

    1 tablespoon of extra virgin olive oil

    Salt and pepper, to taste

    Chopped fresh parsley for garnish

    Instructions

    Whisk the eggs, salt, and pepper in a small bowl.

    Heat the olive oil in a non-stick skillet over medium heat.

    Pour the egg mixture into the skillet and cook for 2-3 minutes or until the bottom is set.

    Sprinkle the shredded brisket and cheddar cheese over one-half of the omelet.

    Use a spatula to fold the other half of the omelet over the filling.

    Cook for another 1-2 minutes or until the cheese is melted and the eggs are cooked.

    Slide the omelet onto a plate and garnish with chopped fresh parsley.

    Breakfast Casserole

    Ingredients

    1 pound breakfast sausage

    ½ pound of bacon

    6 slices of brioche bread

    2 cups shredded cheddar cheese

    5 large eggs

    1 cup heavy cream

    1 cup half-and-half

    4 sliced red potatoes

    1 teaspoon garlic powder

    1 teaspoon onion powder

    Salt and pepper to taste

    TD’s Tips: the key to perfectly cooked bacon is to put it in a skillet (before turning your heat source on) and cook it on LOW and SLOW!

    Instructions

    Preheat your oven to 350°F.

    Bake the brioche bread in the oven until brown and toasted.

    Slice the red potatoes into thin slices.

    Cook the breakfast sausage in a large skillet over medium heat until it is browned and cooked. Drain the fat.

    Over low-to-medium heat, cook the bacon in a large skillet, drain, and crumble. Put it to the side.

    Heat a tablespoon of olive oil in a skillet, and cook the sliced potatoes on medium-high heat cover, flipping potatoes occasionally so they don’t stick to the pan. Cook until potatoes are sweating and slightly Al dente. Season to taste with salt and pepper.

    Grease a 9x13-inch baking dish with cooking spray.

    Line the toasted brioche bread in the dish in one even layer; the next layer is the red potatoes, then sprinkle the cooked sausage and crumbled bacon.

    In a large bowl, whisk the eggs, half and half, heavy cream, garlic powder, onion powder, salt, and pepper.

    Pour the egg mixture over the bread, potatoes, sausage, and bacon in the baking dish and top with cheese.

    Use a spoon to gently press down on the bread and sausage to help it absorb the egg mixture.

    Cover with foil (spray the foil with non-stick spray to prevent the cheese from sticking to the foil).

    Bake in the oven for 40-50 minutes, then remove the foil. Bake for 10-15 minutes or until the top is golden brown and the casserole is set in the center.

    Let the casserole cool briefly before slicing and serving.

    While al dente is usually associated with pasta, it can also be applied to other foods, including potatoes. Al dente potatoes refer to potatoes that are cooked to a firm texture without becoming mushy or falling apart.

    French Toast Casserole with Maple Glaze

    Ingredients

    1 loaf of brioche bread, sliced into 1-inch-thick pieces

    8 large eggs

    2 cups whole milk

    1/2 cup heavy cream

    1/2 cup granulated sugar

    1 tablespoon vanilla extract

    1 teaspoon ground cinnamon

    1/4 teaspoon ground nutmeg

    1/4 teaspoon salt

    For Maple Glaze:

    Maple Glaze Recipe for Bread Pudding:

    1/2 cup pure maple syrup

    1/4 cup heavy cream or whole milk

    2 tbsp unsalted butter

    1/2 tsp vanilla extract

    Pinch of salt

    Instructions

    Grease a 9x13-inch baking dish with cooking spray.

    Arrange the sliced brioche bread in the baking dish in an even layer.

    Whisk the eggs, whole milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, ground nutmeg, and salt in a large bowl.

    Pour the egg mixture over the bread in the baking dish, making sure to coat each piece of bread.

    Cover the baking dish with plastic wrap and refrigerate for at least 2 hours or overnight.

    Preheat your oven to 350°F.

    Bake in the oven for 45-50 minutes or until the top is golden brown and the casserole is set in the center.

    Remove from the oven and drizzle maple glaze (see recipe below) while the casserole is hot.

    Let the casserole cool briefly before slicing and serving.
