Kevin Lynch received his BSE in Electrical Engineering from Princeton University and his PhD in Robotics from Carnegie Mellon University, and he is currently Professor and Department Chair of the Mechanical Engineering Department at Northwestern University. He has been teaching mechatronics at Northwestern for over 15 years, and he has been awarded Northwestern’s highest teaching awards. He publishes and lectures widely on his research in robotics. He is a Fellow of the IEEE.

Introduction

Hi! I am Kevin Lynch and I am the author of ClosetCooking.com, a food and recipe website, where I share my favourite recipes that I cook in my closet sized kitchen. For most of my life I did not really cook much of anything but all that changed a few years ago when I found my love of cooking and things kind of snow balled from there! Zucchini Cheese Bread

A simple zucchini quick bread that's bursting with cheddar cheese!

Prep Time: 10 minutes

Cook Time: 1 hour

Total Time: 1 hour 10 minutes

Ingredients

1 1/2 cup zucchini, shredded (do not squeeze)

1/4 cup green onion, sliced (optional)

2 large eggs

3/4 cup sour cream

1/4 cup butter, melted and cooled

1 1/2 cup cheddar cheese, shredded

2 cups all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoons baking soda

1/2 teaspoon salt

Directions

Mix the zucchini, green onions, eggs, sour cream, and butter well before mixing in the cheese.

Mix the flour, baking powder, baking soda and salt.
