    INTRODUCTION

    The body is constantly changing, especially in women during midlife, with unique and unsettling symptoms such as hot flashes, weight gain, dry skin, joint pain, hair loss, headaches, bloating, and worsening anxiety or depression. This is a natural process that is not easily escaped, but women in midlife often face these changes. A physician, mother, and wife in her late forties, experienced polycystic ovary syndrome (PCOS), a condition caused by insulin resistance. PCOS leads to erratic periods, acne, infertility, ovarian cysts, and unwanted hair growth. Fortunately, PCOS is treatable, and taking hormones greatly helped her.

    After losing her brother to liver failure, the woman coped by binge eating and gained nearly 20 pounds. After talking to her doctor, she agreed to stop hormones for a while. However, taking hormones masked perimenopausal symptoms, and within two weeks, everything changed abruptly. She experienced hot flashes, sleepless nights, and brain fog. She had to change her skincare routine and sleep routine to cope with the intense symptoms.

    The woman realized that many of her patients had similar weight issues, and she realized that her own advice about diet and exercise was not working for them. She realized that she was doing something wrong when her own good advice didn't help her.

    The author researched weight management and human metabolism, specifically focusing on women's health. She discovered three key themes: intermittent fasting, antiinflammatory nutrition, and the exact ratios of protein, carbohydrates, and fat needed to burn fat. She created her own plan using these principles and began her individual health journey. She focused on timing, intermittent fasting, and content, eating more protein and fiber, using olive oil, avocado, nuts, and seeds as fat sources, and avoiding refined carbohydrates.

    Within several months, she lost 20 pounds, felt healthier, stronger, and more energetic. She shared her plan with friends and patients, who also experienced weight loss, fewer menopause symptoms, and more energy. The author launched an online program and it became popular, helping tens of thousands of women shed unwanted pounds, shrink their waistlines, and improve their health.

    The author named her diet after Galveston, a coastal resort town in Texas, where she spent much of her medical career. She enrolled in the Culinary Medicine Program at Tulane University, which educated and trained doctors and other medical professions to understand and apply medical nutrition principles in a practical manner. She was certified as a Culinary Medicine Specialist in 2019, solidifying her understanding of the importance of anti-inflammatory nutrition and the importance of nutrition as the most under-utilized medication.
