    INTRODUCTION

    For years I struggled with ill health, to the point where it nearly cost me my life. In my late thirties I discovered that I am highly intolerant to gluten, lectins and dairy. I started omitting all foods containing these allergens and eating only protein, veg, fruit and some starch.
