Veggie Burger

THE lettuce leaf is a perfect low-kilojoule and low-carb “roll”. The burger includes sweet potato, butternut, almonds and lentils. Sweet potato is a low glycaemic index (GI) alternative to regular potato with a high soluble fibre and vitamin A content.

Lentils contain a combination of protein, carbohydrates, fibre, minerals, folate and vitamin B. Legumes have a low GI which keeps you full for longer.

Avocado is a low-sugar fruit and it is high in healthy mono-unsaturated fat. It’s a powerhouse of vitamins and minerals such as folate, potassium and lutein (good for eyesight).

350g butternut cubes
350g sweet potato cubes
150g lentils, cooked
2ml ground cinnamon
2ml ground nutmeg
30ml extra virgin olive oil
salt and pepper
½ cup ground almonds
1 whole iceberg lettuce

Preheat the oven to 180°C.

Place the butternut, sweet potato and oil in a roasting tray.

Sprinkle with the cinnamon, nutmeg, salt and pepper.

Roast in the oven for 30 minutes, until soft. Leave the butternut and sweet potato to cool.

Mix the lentils, vegetables and half the almonds in a bowl. Mash the mixture together until even.
