About the Authors
Jackie Bright, RN - The Vegan
I am a retired Registered Nurse and worked in the Critical Care Unit. I have served in my churches in many capacities but always in the health and temperance ministries, providing instructional cooking courses across the United States. I reside with my husband on a self-sustaining property in the countryside in Tennessee. I grow my produce on the land and compost food waste to create rich soil. I am a vegan; I don’t eat any meat or meat products.
I am a Christian and I am a firm believer in God’s plan for healthy living. I have witnessed first-hand God’s plan turn around serious health ailments and correct the most hopeless situations. I myself have managed and/or conquered high blood pressure, obesity, arthritis, and thyroid conditions adhering to God’s plan.
Today I would like to help as many as I can to recognize the benefits of and commit to God’s plan for healthy living.
God’s plan is based on 3 John 1:2; Beloved, I pray that you may prosper in all things and be in health, just as your soul prospers.

I'm a busy wife, businesswoman, and mother with no time to plant and harvest foods. Not to mention that my homeowner’s association would certainly not approve. Well that was my mantra until my weight ballooned to over 350 pounds and my blood pressure numbers read more like a social security number than a blood pressure reading. My mother appealed to me to try God. She assured me that my future did not have to be one of pills and appointments. More than her words, I watched her actions and their results. She had lost weight, cured her ailments, and looked my age instead of twenty plus years my senior. I was curious about her lifestyle.
Taking a page from my mom's lifestyle, I began to create delicious meals centered around the principles of God's Plan. Three years later, I'm under 200 pounds and have consistent blood pressure readings of around 120/80! While I haven't totally given up meat, I practice the principles of God’s plan and continue to be curious about the vegan lifestyle and strive to move more and more in that direction.
My recipes are inspired by my curiosity. I combine what
