    Roasted Yam and Kale Salad

    Total Cooking Time: 1 hr 15 mins

    Servings: 4

    Ingredients

    1-1/4 jewel yams, cut into 1-inch cubes

    2 teaspoons olive oil

    salt and freshly ground black pepper to taste

    2 teaspoons olive oil

    5/8 onion, sliced

    2 cloves garlic, minced

    5/8 bunch kale, torn into bite-sized pieces

    1 tablespoon and 1 teaspoon red wine vinegar

    3/4 teaspoon chopped fresh thyme

    Directions

    Step 1

    Preheat an oven to 400 degrees F (200 degrees C). Toss the yams with 2 tablespoons of essential olive oil in a bowl. Period to flavor with salt and pepper, and arrange equally onto a baking sheet.

    Step 2

    Bake in the preheated oven before yams are tender, 20 to 25 minutes. Great to room heat range in the refrigerator.

    Step 3

    Meanwhile, heat the rest of the 1 tablespoon of essential olive oil in a sizable skillet over medium high temperature. Cook and mix the onion and garlic before onion provides caramelized to a golden dark brown, about 15 minutes. Mix in the kale, cooking food until wilted and tender. Transfer the kale mix to a bowl, and great to room heat range in the refrigerator.
