Classic roast chicken & gravy

50g butter, softened
1 garlic clove, crushed
1.4kg whole chicken
3 medium brushed potatoes, quartered lengthways
3 medium carrots, halved lengthways, then halved widthways
2 medium onions, cut into wedges
1 tbsp extra virgin olive oil
1 tbsp plain flour
1½ cups (375ml) salt-reduced chicken stock
Fresh thyme sprigs, to serve
Green beans (optional)
