Simple Mediterranean baked fish fillets

SERVES 4 PREP + COOK TIME 35 MINS

1 medium red onion, cut into 8 wedges
1 large red capsicum, sliced thickly
2 medium courgettes, sliced thickly
4 garlic cloves, peeled
¼ cup (60ml) extra virgin olive oil
200g truss cherry tomatoes
2 tablespoons chopped fresh flat-leaf parsley
2 tablespoons fresh oregano leaves
2 teaspoons finely grated lemon rind
¼ cup (50g) Kalamata olives
4 x 200g skinless snapper fillets
2 tablespoons pine nuts, toasted

1 Preheat oven to 220°C. Line a large oven tray with baking paper.
