    Chicken Marinara &

    Bean Salad

    Ingredients

    Green beans (1 ½ cups, cut in halves)

    Canned kidney beans (1/4 cup, drained)

    Cider vinegar (2 tablespoons)

    Parsley (1 teaspoon, dried)

    Basil (1 ½ teaspoons, dried)

    Tomato and basil sauce (1/4 cup)

    Vegan mozzarella cheese (3 tablespoons, shredded)

    Canned garbanzo beans (1/4 cup, drained)

    Coconut oil (1 teaspoon)

    Chives (1 teaspoon, dried)

    Black pepper (1/2 teaspoon)

    Chicken breast (4 oz.)

    Garlic powder (1/2 teaspoon)

    Directions

    Set oven to 450̊F.

    Steam green beans until crisp preferably in a steamer. Combine green beans with kidney and chickpeas in a bowl.

    In a small bowl add oil, chives, black pepper, vinegar, 1 teaspoon basil and parsley; whisk together and add to beans mixture. Toss to combine and chill for 30 minutes or until ready to serve.

    Put chicken onto a piece of foil (large enough to wrap chicken). Add tomato sauce to chicken along with garlic powder, cheese and leftover basil.

    Wrap chicken leaving a small opening. Place foil on a baking tray and bake for 20 - 40
