1½ tablespoons extra-virgin olive oil
1 onion, finely chopped
2 celery stalks, finely chopped
2 teaspoons lemon zest
2 teaspoons chopped fresh thyme
2 garlic cloves, crushed
½ teaspoon dried chilli flakes
250g Arborio rice (or other short-grain rice)
1 x 400g can cherry tomatoes
2 cups gluten-free, reduced-salt vegetable stock
200g broccoli, cut into florets
200g button mushrooms
60g baby rocket, to serve

Preheat oven to 180˚C. Heat 1 tablespoon oil in a large casserole dish
