    Thanksgiving Dinner

    Cooking for Thanksgiving doesn't have to be a nightmare; it only needs a bit of organization, teamwork and good spirit. You can divide the work among family members, so when the time for the big feat arrives everyone will be in the best mood for enjoying a wonderful meal.

    We have included some vegetarian options and even a home-made tofu turkey with stuffing (not the mock store-bought turkey) and plenty of side dishes to satisfy even the most picky eaters. You ll find two different step by step turkey recipes, stuffings (even a Mexican style one), lots of options to choose from and, of course, five traditional desserts.

    The centerpiece of Thanksgiving dinner is the turkey, and everyone seems to have their perfect recipe. Here you will find two tried and true recipes to cook your best turkey ever.

    Roast Turkey

    When you are handling raw turkey, be very careful and treat it as if you were working with a raw chicken. To avoid risk of contamination, use a separate cutting board and utensils when handling the raw turkey. Wash your hands before you touch anything else in the kitchen. Use paper towels to clean up.

    Ingredients

    1 turkey, approx. 15 lbs.

    Juice of a lemon

    Salt and pepper

    Olive oil or melted butter

    ½ yellow onion, peeled and quartered

    Tops and bottoms of a bunch of celery

    1 to 2 carrots

    1 bunch of parsley

    Several sprigs of fresh rosemary, thyme

    Directions

    If you have a frozen turkey, you will need to defrost it first, a very slow process that can take days depending on the size of the turkey. Place the wrapped frozen turkey in a pan and then in the refrigerator to defrost. It takes about 5 hours of defrosting for every pound of turkey.

    Remove the turkey from the refrigerator 2 to 3 hours before cooking, to allow it
