How do you like your coffee or tea? Cold or hot?
What about having it lukewarm where it's neither cold or hot?
Your tongue becomes the "thermometer" that gives you that feedback. You must either get the temperature adjusted so you can enjoy a hot brewed coffee or tea. 
What you have done is acted in a dual role - the thermostat to get the temperature you want and the thermometer to measure the temperature making sure it's just right.
