1. Chicken Teriyaki Bowl
Ingredients:
● 1 lb (450g) boneless, skinless chicken breasts, sliced into bite-sized pieces
● 1 cup (200g) white rice
● 1 cup (240ml) water
● 1/4 cup (60ml) soy sauce
● 2 tablespoons (30ml) honey
● 2 tablespoons (30ml) rice vinegar
● 1 clove garlic, minced
● 1 teaspoon (5ml) grated fresh ginger
● 1 tablespoon (15ml) sesame oil
● 1 tablespoon (15ml) vegetable oil
● 1 cup (150g) broccoli florets
● 1 carrot, julienned
● 1/2 red bell pepper, sliced
● 2 green onions, sliced
● Sesame seeds for garnish (optional)
● Sliced green onions for garnish (optional)
Instructions:
1. In a medium saucepan, combine the rice and water. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and the water is absorbed.
2. In a small bowl, whisk together the soy sauce, honey, rice vinegar, garlic, and ginger to make the teriyaki sauce.
3. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook for 5-6 minutes or until browned and cooked through.
4. Remove the chicken from the skillet and set aside. In the same skillet, add the sesame oil and stir in the broccoli, carrots, and bell pepper. Cook for 3-4 minutes or until the vegetables are tender-crisp.
5. Return the cooked chicken to the skillet and pour the teriyaki sauce over the chicken and vegetables. Cook for another 2-3 minutes, stirring occasionally, until the sauce thickens slightly and coats the chicken and vegetables.
6. Serve the chicken teriyaki over the cooked rice. Garnish with sesame seeds and sliced green onions if desired. Enjoy your delicious Chicken Teriyaki Bowl!
Note: Feel free to customize your teriyaki bowl with additional vegetables such as snap peas, mushrooms, or baby corn. You can also add a sprinkle of red pepper flakes for some heat if you like your dish spicy.
2. Mediterranean Chickpea Salad
Ingredients:
● 2 cans (15 ounces each) chickpeas (garbanzo beans), drained and rinsed
● 1 English cucumber, diced
● 1 pint (about 10-12 ounces) cherry tomatoes, halved
● 1/2 red onion, finely chopped
● 1/2 cup (75g) Kalamata olives, pitted and halved
● 1/2 cup (75g) crumbled feta cheese
● 1/4 cup (60ml) extra-virgin olive oil
● 2 tablespoons (30ml) red wine vinegar
● 1 clove garlic, minced
● 1 teaspoon (5ml) dried oregano
● Salt and black pepper to taste
● Fresh parsley for garnish (optional)
Instructions:
1. In a large mixing bowl, combine the chickpeas, diced cucumber, halved cherry tomatoes, chopped red onion, halved Kalamata olives, and crumbled feta cheese.
2. In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, minced garlic, dried oregano, salt, and black pepper to make the dressing.
3. Pour the dressing over the chickpea mixture in the large bowl. Gently toss until all the ingredients are evenly coated with the dressing.
4. Taste and adjust seasoning with more salt and pepper if needed.
5. Cover the bowl and refrigerate
