Chicken and green olive tray bake

SERVES 4 PREP AND COOK TIME 1 HOUR 35 MINUTES

12 (1.8kg) chicken drumsticks
2 tablespoons extra virgin olive oil
½ tsp ground white pepper
1 medium lemon
4 fresh rosemary sprigs
750g baby potatoes
6 cloves garlic, bruised
2 teaspoons sumac
250g truss cherry tomatoes
½ cup (75g) Sicilian green olives
½ cup (40g) flaked almonds, toasted
½ cup fresh oregano leaves

1 Preheat oven to 180°C (160°C fan-forced).

2 Place chicken, oil and pepper in a large bowl. Season with salt; toss until well coated.

3 Finely grate rind of half the lemon into a small bowl. Peel remaining rind thickly from lemon with a sharp knife so no white pith remains; discard. Thinly slice lemon; remove seeds.
