    Introduction

    Rice is the edible seed from the plant Oryza sativa. Depending on the region, the climate, and how it is cultivated, they come in several different shapes, colors, sizes, and textures. They also carry unique flavors and aromas. Rice is one of the most consumed foods worldwide. Most Asian and Indian cuisine use rice in one form or another. While you can substitute one type of rice for another in some cases, most recipes are tailored to use a specific type of rice. Since recipes in this book are only savory or spicy dishes, mostly basmati, long-grain, or jasmine rice is used in these recipes.

    Types of rice and their characteristics:

    Rice can be classified into different groups based on their size shape (long-grain, medium-grain, short-grain), texture (sticky rice, parboiled rice), color (white or polished rice, brown rice, black rice, wild rice) or aroma (basmati rice, jasmine rice). Remember this is a broad classification and any rice could belong to many of these classifications. For example, basmati rice could be white, long-grain. You could also get brown or black basmati rice. Below are some of the commonly used rice

    Basmati rice: Basmati rice is a long-grain nutty and aromatic rice from the Indian sub-continent. Basmati rice is used in many ethnic and Indian subcontinent and Persian rice dishes. Commonly commercially available basmati rice comes in white but brown basmati rice is also available. When cooked basmati rice becomes long, dry, and remains separate. Most recipes in this book use basmati rice.

    Brown rice: Brown rice may be substituted for basmati rice in many of the recipes in this book. Brown rice is less processed or polished than white rice and is healthier for you.  The nutritious mineral and vitamin-rich bran layer is left on the rice surface which imparts the brown color to the rice. Brown rice contains more nutrients such as phosphorous, magnesium, and potassium while offering more fiber per serving than white rice.

    Jasmine Rice: Jasmin rice is primarily cultivated in Thailand and is long-grain fragrant rice. Jasmin rice is used many south Asian dishes as it is usually moist and soft which help absorb spices and other flavors that it is cooked in. While basmati rice remains dry and separate after cooking, jasmine rice is more moist and sticky.

    Parboiled Rice: Parboiled rice is also a healthier alternative to white rice as it retains some of the nutrients of bran during the process. Usually, rice with the husk is soaked, steamed, and dried before removing the husk. This process results in the rice being partially cooked and retaining some of the nutrients in the bran. Parboiled rice is usually cooked separately and served with curry, stir fries, or other side dishes.
