Miso is a traditional Japanese condiment that consists of a thick paste made from soybeans that have been fermented with salt and a koji starter, the fungus (also used to ferment sake). If you have yet to sample the delights of miso, its flavour is a combination of salty and savoury (known as ) and its colour can vary between white, yellow, red or brown, depending on the variety, of which there are many.
