    Why I wrote this

    Dear reader,

    Thank you for your interest in South Indian Vegetarian Cookbook. This is a collection of recipes for the vegetarian dishes I cook regularly at home.

    I love to cook and have been learning to do so for over 20 years. For any given dish, I try out a number of different recipes and record the best recipe in a notebook, along with the modifications I had made. I learnt some of these recipes from my mother.

    When family and friends liked some of these dishes, I felt it will be good to share these recipes with everyone. The result is this cookbook.

    I hope you will enjoy making these dishes.

    What you will need

    I make use of the following items in this cookbook.

    Measuring cups

    ¼ cup, ½ cup and 1 cup.

    Measuring cups

    Measuring spoons

    ¼ tsp, ½ tsp, 1 tsp, and 1 tbsp.

    For dry or wet grinding, for example, to prepare items like coconut chutney.

    For filtering tea, coffee, or jaggery in recipes like sweet pongal.

    Pressure cooker

    A kitchen equipment used for cooking items quickly under a higher pressure and temperature. Useful for cooking dhal, green gram etc.,

    If you do not have one at home, you can soak the item overnight in water and then cook in a pan with a closed lid.
