Insulin is the hormone that helps transport sugar from the blood into the cells of the liver and muscle, where it is used as energy. Insulin is released when we eat something that contains sugar, and it helps bring our blood sugar back down to normal levels. But today, our insulin spikes are frequently stacked one on top of another because of the grain-based sandwiches, wraps, and snacks we are bingeing on around the clock.

Elevated insulin also means that your ability to burn fat is blocked. Many tissues in your body would love to use fat for fuel if only they were given the chance. Today, our ability to burn fat has been hijacked by the constant presence of cheap, easily digestible carbohydrates in our diets.
