INTRODUCTION
The reason I’ve chosen to do this cookbook, is to try and bring people from different backgrounds together. The world we currently live in is not a happy one, there’s too much hate. What we need to do is start again with the basics, and food is a basic. Food also brings people together, and that’s the aim of this book.
The brain knows that spices from different countries can come together and create awesome dishes. I believe that the heart needs a reminder that people can also come together to achieve greatness.
For years I’ve been fascinated with everything African. Her people, her languages, her cultures, her colours and her food. I’ve found that African’s cook with a wide range of spices, most of which are found in our own kitchen cupboards.
I’ve taken some dishes that I enjoy and added my version of an African twist to each. I thought what better way to honour such remarkable people and breath-taking flavours, then to redesign some of my favourite dishes.
