PUMPKIN SOUP WITH MILK & ORZO

Serves 6 Takes 35-40 minutes

INGREDIENTS

For the soup

• 900g/2lb pumpkin or butternut squash, peeled, deseeded and diced
• 2 chicken or vegetable stock cubes or stock pots
• 125g/4oz orzo
• 700ml/1¼pt full-fat milk
• Sea salt and freshly ground black pepper
• A little caster sugar (optional)

To serve

• Ground cinnamon
• About 9 crunchy amaretti, crumbled or whole

Put the pumpkin or butternut squash in a saucepan with the stock cubes or stock pots and 700ml/1¼ pt
