Here’s one for those of us who Like pineapple in savoury dishes. It’s also a good recipe for using Leftover rice – you’ll need 200g (1 cup) uncooked rice. For best results, cook rice a day ahead and spread out on a rimmed tray to cool. Then pop in the fridge, uncovered, overnight to dry out.
