Cucumber Soup

Ingredients

2 large cucumbers, peeled and seeded

2 cups Greek yogurt or whole milk yogurt

2 garlic cloves, pressed (optional)

1 teaspoon salt

1/2 cup almond flour or 1/4 cup almond paste (home made with little milk)

1 slice of white bread (soak briefly in water and then wring out the water)

2 tablespoons lemon or lime juice

1/4 to 1/2 teaspoons salt (or to taste)

1/4 teaspoon white pepper (or to taste)

olive oil

water or milk

Directions

Blend all soup ingredients together in a blender till smooth, adding enough water to achieve a perfectly creamy texture (about a scant half cup).  Season with salt and pepper to taste. Let cool in the fridge for an hour or more, if desired.
