About this ebook

Grilling of meat over fire on grill, originated around 17th century BCE in Greek. Meat was grill on type of grill is used to make Souvlaki or Kebab.
Kabab (Kebab) is barbeque of Middle Eastern, Persian, Mediterranean and South Asian countries; And very popular way of cooking in every country. Kebab was spread in Europe by Turks and in Asia by Mughals (Mongol in Persian).
Kabab recipes and cooking method varies from region to region. Mostly herbs are used to flavor the meat. Kabab can be grill, cook in a pot or shallow fry in a frying pan. Usually Kabab is served with Pita bread or local breads like Naan or with rice pilaf.
Traditionally Kabab are made with lamb, other meats may include beef, chicken, goat or fish , other meats can be used for making Kabab.
Kabab are made with cubed meat called Shish Kabab and with ground meat is called Kafta kabab or strip of meat.

    Following are list of commonly used spices, Herbs and spice mixes

    Aniseed

    Red pepper

    Black pepper

    Note: Mix of spices are designed to give unique flavor to a dish. Following mix of spice can be made in advance and keep in air tight containers for about six months or in freezer for freshness.

    Garam Masala

    Ingredients:

    1/2 cup coriander seeds

    1/4 cup cumin seeds

    1 tablespoon caraway seeds

    1 tablespoon black cumin seeds

    5 bay leaves

    5 Black cardamoms

    10 clove

    6 2 inch cinnamon

    2 teaspoon black pepper

    2 medium size whole dry red pepper

    Direction:

    Dry roast all the ingredients on low heat until crackle for about 1 minute or until fragrant. Grind in spice grinder or in coffee grinder until fine powder.

    Tikka Masala

    Ingredients:

    2 teaspoon Cumin powder

    2 teaspoon Black pepper

    2 Teaspoon Garam masala

    2 teaspoon coriander powder

    2 teaspoon paprika powder

    1/2 teaspoon garlic powder or garlic paste

    1/2 teaspoon ginger powder or ginger paste

    1/2 teaspoon cayenne pepper powder

    1/2 teaspoon sugar

    Drop of red color (optional) [add before using to make a paste]

    Direction:

    Mix all together in a non- reactive bowl.

    Note:

    1: The coriander and cumin powders must be freshly ground.

    2: This will keep for months if stored in an airtight container or in freezer

    Tandoori Masala

    Ingredients:

    4 teaspoon ground coriander

    3 teaspoon ground cumin

    4 teaspoon garlic powder

    4 teaspoon paprika

    3 teaspoon ground ginger

    2 teaspoon green mango powder

    1 teaspoon dried mint

    1 teaspoon cayenne pepper powder

    pinch of Saffron or Drop of red color (optional) [add before using to make a paste]

    Direction:

    Mix all together in a non- reactive bowl.

    Note:

    1: The coriander and cumin powders must be freshly ground.

    2: This will keep for months if stored in an airtight container or in freezer

    Kababs

    Kabab: Traditionally Kabab are made with lamb, beef, chicken, goat and fish.

    Following are some of Kabab recipes from around the world.

    Shish Kabab (Basic)

    Ingredients:

    1 lbs Beef -boneless - cut into 1 inch cube (or chicken or any meat of choice)

    2 Bell pepper - cut into 1 inch cube

    2 medium size onion - cut into 1 1/2 inch

    10 to 12 mushroom (small)

    Marinate (optional) — Marinate meat for at least 4 hours or overnight in fridge.

    Skewers

    Direction:

    Step 1 Thread the meat and vegetable on the skewers; start with a piece of meat and alternate with vegetables, leaving bit space between two pieces. Brush the marinade over kabobs.( if using marinate). Place the kabobs over hot Grill for approximately 3 minutes, turning to cook each side. Serve with rice or choice of bread with grill vegetables.
