Pumpkin Pecans Fat Bombs
Prep time: 10 minutes
Total time: 4 hours 10 minutes

INGREDIENTS
1/4 teaspoon of cinnamon
2 teaspoon of pumpkin pie spice
1/4 cup of golden monk fruit sweetener
1/2 cup of pumpkin puree
4 ounces of softened cream cheese
1/2 cup of coconut oil
1/2 cup of pecans (optional)
Avocado oil spray
INSTRUCTIONS
1. Spray a small pan with avocado oil spray and toast the pecans over medium heat until fragrant. Set aside to cool.
2. Heat the coconut oil and cream cheese in a medium pot over medium heat until coconut oil is melted and cream cheese is softened. Transfer into mixing bowl.
3. Add monk fruit sweetener, pumpkin puree, and pumpkin pie spice into the mixing bowl. Mix together using an electric mixer until well incorporated and smooth.
4. In silicone mold cavities, spoon the mixture and add 1 or 2 toasted pecan on top, sprinkle with the cinnamon.
5. Freeze the silicone mold about 4 hours in freezer until solid. Remove from silicone mold and enjoy.
Recipe Notes:
Keep in the freezer, pop it out when you are ready to eat and let thaw for about 10-15 minutes before eating.
