    Delicious Delights - Don Carlos

    Chapter 1: Algerian Couscous -(Algeria)

    Ingredients:

    For the couscous:

    ●  2 cups couscous

    ●  2 tablespoons olive oil

    ●  1 teaspoon salt

    ●  2 cups boiling water

    For the stew:

    ●  1 lb (450g) lamb or beef, cut into chunks

    ●  1 large onion, finely chopped

    ●  2 cloves garlic, minced

    ●  2 tablespoons olive oil

    ●  2 carrots, peeled and diced

    ●  2 zucchinis, diced

    ●  2 potatoes, peeled and diced

    ●  1 bell pepper, diced

    ●  1 can (14 oz/400g) chickpeas, drained and rinsed

    ●  2 tomatoes, diced

    ●  2 tablespoons tomato paste

    ●  1 teaspoon ground cumin

    ●  1 teaspoon ground coriander

    ●  1 teaspoon paprika

    ●  1/2 teaspoon turmeric

    ●  1/2 teaspoon cinnamon

    ●  Salt and pepper to taste

    ●  Fresh parsley, chopped (for garnish)

    Instructions:

    Prepare the couscous:

    ●  In a large bowl, combine the couscous, olive oil, and salt.

    ●  Gradually pour the boiling water over the couscous while stirring.

    ●  Cover the bowl with a clean kitchen towel and let it sit for about 10 minutes, allowing the couscous to absorb the water.

    ●  Fluff the couscous with a fork to separate the grains and set it aside.

    Prepare the stew:

    ●  In a large pot, heat the olive oil over medium heat.

    ●  Add the chopped onion and minced garlic. Sauté until they become translucent and fragrant.

    ●  Add the meat chunks and brown them on all sides.

    ●  Stir in the tomato paste, ground cumin, ground coriander, paprika, turmeric, cinnamon, salt, and pepper. Cook for a couple of minutes to allow the spices to release their flavors.

    ●  Add the diced tomatoes and cook for another 5 minutes, stirring occasionally.

    ●  Pour enough water to cover the meat and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for about 1 hour or until the meat is tender.

    ●  Add the diced carrots, zucchinis, potatoes, bell pepper, and chickpeas to the pot. Continue simmering for an additional 30 minutes or until the vegetables are cooked to your desired tenderness. Adjust the seasoning if needed.

    Serve:

    ●  Fluff the couscous once more with a fork.

    ●  Transfer the couscous onto a serving platter, forming a well in the center.

    ●  Pour the stew into the well in the couscous, allowing the flavors to meld together.

    ●  Garnish with fresh chopped parsley.

    ●  Serve the Algerian couscous hot and enjoy!

    Note: Algerian couscous can be served with additional condiments such as harissa (spicy paste) or preserved lemons for added flavor. You can also accompany it with a side of salad or traditional Algerian bread.

    Chapter 2: Moamba de Galinha (Angolan Chicken Stew) - (Angola)

    Ingredients:

    ●  1 whole chicken, cut into pieces

    ●  2 tablespoons palm oil (or substitute with vegetable oil)

    ●  1 onion, finely chopped

    ●  2 cloves garlic, minced

    ●  2 tomatoes, diced

    ●  1 red bell pepper, diced

    ●  1 green bell pepper, diced

    ●  2 carrots, peeled and sliced

    ●  1 cup okra, trimmed and sliced

    ●  2 cups chicken broth

    ●  1 cup coconut milk

    ●  2 tablespoons tomato paste

    ●  1 tablespoon ground paprika

    ●  1 teaspoon ground ginger

    ●  1 teaspoon ground coriander

    ●  1 teaspoon ground cumin

    ●  1 teaspoon dried thyme

    ●  Salt and pepper to taste

    ●  Fresh cilantro, chopped (for garnish)

    ●  Cooked white rice (for serving)

    Instructions:

    ●  In a large pot or Dutch oven, heat the palm oil (or vegetable oil) over medium heat.

    ●  Add the chopped onion and minced garlic to the pot. Sauté until the onion becomes translucent and fragrant.

    ●  Add the chicken pieces to the pot and brown them on all sides.

    ●  Stir in the diced tomatoes, red and green bell peppers, sliced carrots, and sliced okra. Cook for a few minutes until the vegetables start to soften.

    ●  In a separate bowl, whisk together the chicken broth, coconut milk, tomato paste, ground paprika, ground ginger, ground coriander, ground cumin, dried thyme, salt, and pepper.

    ●  Pour the prepared mixture into the pot with the chicken and vegetables. Stir well to combine.

    ●  Bring the stew to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 1 hour or until the chicken is cooked through and tender. Stir occasionally.

    ●  Taste the stew and adjust the seasoning if needed.

    ●  Once the stew is ready, remove it from heat. Sprinkle fresh chopped cilantro on top for added flavor and aroma.

    ●  Serve the Moamba de Galinha hot over a bed of cooked white rice.

    Chapter 3: Peanut Sauce with Grilled Fish - (Benin)

    Ingredients:

    For the Peanut Sauce:

    ●  1 cup unsalted peanuts

    ●  2 tablespoons peanut oil (or vegetable oil)

    ●  1 onion, finely chopped

    ●  2 cloves garlic, minced

    ●  1 red bell pepper, diced

    ●  1 green bell pepper, diced

    ●  2 tomatoes, diced

    ●  1 cup vegetable broth (or water)

    ●  1 teaspoon ground cumin

    ●  1 teaspoon paprika

    ●  1/2 teaspoon cayenne pepper (optional, for heat)

    ●  Salt and pepper to taste

    For the Grilled Fish:

    ●  4 fish fillets (such as tilapia or sea bass)

    ●  2 tablespoons lemon juice

    ●  2 tablespoons olive oil

    ●  1 teaspoon ground paprika

    ●  1 teaspoon dried thyme

    ●  Salt and pepper to taste

    For Serving:

    ●  Cooked rice or boiled yam

    Prepare the Peanut Sauce:

    ●  In a dry skillet over medium heat, lightly toast the peanuts until they are fragrant and slightly golden. Let them cool, then place them in a food processor or blender. Process until you have a smooth peanut
