1 yellow squash, sliced
1 tablespoon olive oil
2 cloves garlic, minced
Salt and black pepper, to taste
Lemon wedges, for serving
Instructions:
Preheat the grill to medium-high heat.
In a bowl, mix together the sliced bell peppers, red onion, zucchini, yellow squash, olive oil, minced garlic, salt, and black pepper until well coated.
Spread the vegetables out on a large baking sheet in a single layer.
Grill the chicken breasts for 5-6 minutes per side, or until cooked through and no longer pink in the centre.
While the chicken is grilling, roast the vegetables in the oven at 400°F (200°C) for 20-25 minutes, or until tender and slightly browned.
