I'm Ruth Gibson and I have been volunteering in a busy rock climbing guest house in Spain since 2015. I make flapjacks there and they are very popular! During this time, I have been asked many, many times for the recipe, and so I decided to make this book.

Not wanting to make just a recipe book, this book also contains nutritional information on the ingredients and how they can help improve your sports performance.

This collection has ideas for new and interesting flavours, including vegan, lactose-free and gluten-free recipes.

Hopefully, I have created the perfect flapjack book for hill-walkers, rock climbers, mountain bikers, scuba divers, trail runners and anybody who loves adventuring outdoors!

    Introduction

    What is flapjack?

    Flapjacks are a traditional British snack. According to the Oxford English Dictionary, they are a sweet dense cake made from oats, golden syrup, and melted butter, served in rectangles. They are essentially a high energy, easy to make tray bake. Around the world there are many versions, such as muesli bars, cereal bars or granola bars. Flapjacks in America are very different, and are what Brits call pancakes.

    In Britain, the word ‘flapjack’ first emerged in the early 20th Century to describe baked foods made from oats.

    When I make flapjacks, I like to use muesli mixed with oats to give extra flavour and texture. To this base, I add various different ingredients to give an amazing variety of different flavours. Over recent years I have adapted each of my recipes and modified the quantities of each ingredient to create the perfect blend for each recipe and to cater for many dietary requirements and tastes.

    Flapjacks are the perfect accompaniment to a day out in the wild – they will survive in your bag or pocket, whilst you drag them up a mountain or bounce them around down a rough trail descent.

    Who are StRuth Adventures?

    Steve and Ruth are a travelling couple from the UK who have volunteered at The Olive Branch Guesthouse in Southern Spain for several winter seasons and have been fuelling climbers, hikers and bikers to achieve great things. Our flapjacks will help you climb a whole two grades above your previous best!

    Ruth, the recipe developer and crazy combination ideas thinker, has a rock climbing, hiking, gliding, sailing and scuba diving background. Ruth prefers her flapjacks to be softer, chewier and not crumbly. Her favourite flavours are chilli chocolate, peppermint chocolate topping and also Amaretto and raisin.

    Steve, the chief taster and wet ingredient chef, has a wind surfing and martial arts background and has more recently discovered climbing, hiking and scuba diving. Steve likes his flapjacks to be firm and enjoys the simpler flavours like peanut butter.

    Where did the recipe we use come from?

    Gary Byrne, joint-owner of The Olive Branch Guesthouse in El Chorro, had been making flapjacks for several years for the guests and passed the recipe on to Ruth.
