    Chapter 1: What is a Vegan Ketogenic Diet?

    Let’s begin by looking at the two aspects of the diet.

    Veganism takes vegetarianism one step further by eliminating all animal by-products. People who eat at least eight servings of vegetables and fruits a day are less likely to have a stroke. Cataracts and macular degeneration are less likely with a vitamin A-filled diet of carrots, spinach, and kale. Whole, unprocessed foods are generally filled with fiber, aiding in digestion and lowering cholesterol. Flaxseed and chia prevent cardiovascular disease and are filled with anti-cancer lignans. Blueberries are brimming with antioxidants and vitamin C; they keep cell-damaging free radicals under control, and they help keep your mind sharp. Cruciferous vegetables, such as broccoli, cauliflower, and kale, have been shown to help protect our eyesight, detoxify our liver, and inhibit breast cancer stem cells. To put it simply, the risk of cancer, kidney disease, diabetes, heart disease, and essentially, all other chronic illnesses are just reduced with a plant-based diet. On the other hand, high consumption of red meat and processed meats have been shown to increase the risk of cancer, as officially stated by both the World Health Organization and the FDA.

    As for animals and the environment, veganism is an ethical and moral decision for a lot of people. Many do not believe animals are all that different from humans; some animals mourn their dead companions, others can talk to each other, some use tools, and others have as complex emotions as humans have. They feel pain, just as we do. The conditions at large factory farms are also a driving force for many people; chickens, cows, and other animals for consumption are raised in exceedingly dirty conditions and slaughtered in a horrifying manner.
